Here's what's cooking in my kitchen this week!
Mon.- Eggplant Casserole. Serve with a salad.
Tues.- Southwestern Meatballs with Black Bean Salsa. Serve with rice and lime wedges.
Wed.- leftovers
Thurs.- Coconut Chicken with Apricot Sauce. Serve with garlic rice pilaf, and broccoli.
Fri.- take out or dinner out
Sat.- Order pizza. Little Polka Dot is having a slumber party.
Sun.-Baked Creamy Chicken Taquitos. Serve with refried beans and salad.

I see you are going to try the eggplant casserole! Good luck! The flavors were delicious, but I found the bread crumbs to be too much. Perhaps cut back on them. I ate the leftovers on Saturday and sprinkled them with mozzarella cheese and baked it. That made it yummy!

Spring Break here. Our menu plan consists of lots of ball park hot dogs!
