Happy Monday!
Did you all have a good weekend? My son was away on a camping trip with his buddies. He had a blast! My daughter and I worked at a bake sale and went shopping for her father/daughter dance. Found a lovely coral dress and very sparkly shoes! Hubs took us out to our favorite pizza place. It was a good weekend for us.
Menu Planning is going well. Except for that incident last week when I was scheduled to cook in the crock pot and had not even been to the grocery store and it was already past noon when I remembered!
Here's what's cooking in my kitchen this week!
Monday- Sundried Tomato Pasta with Broccoli. Serve with salad and garlic bread.
Tuesday- Apricot and French Dressing Crock Pot Chicken. Serve w/brown rice and salad.
Wednesday- leftovers
Thursday- Spinach Tomato Orzo Soup. * Serve with a nice hearty bread.
Friday- Quinoa Stuffed Bell Peppers **
Saturday- dinner out
Sunday- leftovers
And something sweet...
Nutella Swirl Blondies !
*This soup is great! I half the recipe because it makes a lot! I added more black pepper, a dash of hot sauce, and grated parmesan cheese.
**I'd love to know what you would pair with the stuffed pepper dish on Friday. I'm having a hard time thinking of something to go with it. Thank you!

Tonight my husband made his 'famous' Quorn Cottage Pie topped with cheese, it was superb!!

I can't believe it took me this long to find your blog but now I have. Hooray! I make stuffed peppers all the time but have never tried quinoa. I think will give it a whirl!
