Menu Plan Monday. August 6, 2012

Hello! Did you all have a good weekend? Saturday, we went out to dinner with some college buddies who recently moved to Charlotte. It was so nice to catch up and share fun stories about college days! We enjoyed a delicious dinner uptown at LaVecchia's and then drove to Amelie's for dessert and coffee. (I ♥♥♥ French Macaroons!) Our children loved their fun evening at home with a cute new sitter. (They always love playing board games and staying up a little later when a sitter is here!)



What's on the menu this week?
Monday- Pasta with Marinara Sauce (from a jar-please don't tell my mom!) and a salad.
Tuesday- Chicken and Black Bean Casserole *** with broccoli and rolls.
Wednesday- Autumn Chopped Salad with homemade garlic bread.
Thursday- leftovers
Friday- takeout sushi:)
Saturday- Orzo with Parmesan and Basil with cooked carrots and green peas.
Sunday- Chicken Enchiladas with brown rice and black beans. (and sour cream and salsa!)

*** I like to add 4 Tbsp. of sour cream in the mixture when I put it in the dish. :)

  1. Lots of fresh produce ready in the garden now, so this week will likely be Eggplant Parm, Ratatouille, Chile Relleno casserole, some type of stir fry and lots of grilled veggies!!

  2. This weekend I started reading "One Summer" by David Baldacci, made banana muffins from scratch and tried to stay cool.
    It's been humid in Las Vegas, as well as hot!
    It's fun catching up with old friends. Sounds like the kids had lots of fun too.

    BerryMorins--I've never read any of Baldacci's books-I'll have to check one out from the library next time I go. Banana muffins... yum!
