Menu Plan Monday. July 1, 2013
Hello! I have missed you all! I took a little break from the blog while my children and I were visiting my parents for a couple of weeks. It was so nice to be in South Carolina. I grew up in the country and it will always be home to me!
What's on the menu this week?
Monday- leftover veggie spaghetti. My hubby cooked for us last night!
Tuesday- Tex-Mex Fajitas and fresh S.C. peaches.
Wednesday- Roasted Red Pepper and Mixed Green Salad. (from my friend, Amy)
Thursday- Grill out for the 4th of July!
Friday- Cottage Cheese Noodles with bacon and green peas.
Saturday- leftovers
Sunday- dinner out with friends
How have you all been? My parents do not have an internet connection and I don't have a fancy phone, so I feel like I am really "out of the loop". I have just reopened Polka Dot Skies and I am looking forward to catching up with my inspiring bloggy friends! Please leave a note and let me know how you are doing!

Thank you, Haunani! Cottage Cheese Noodles are delicious and so easy! They sound a little bit strange, but the cottage cheese melts to create a creamy cheesy goodness! This is one of those recipes that I just throw together and the measurements do not have to be perfect. Cook 8 slices of bacon and crumble it up after it cools. Set to the side. In a bowl, mix 2 cups of sour cream and a small container of cottage cheese. Also add about 1/2 cup of milk and spices/herbs. (2 tsp. of paprika, 2 tsp. dill, and 1 tsp. black pepper. Let the mixture in the bowl warm up to room temp. That way your dish will stay hot when you add this creamy mixture to your noodles. Cook a box of bowtie pasta. After draining the pasta, add the creamy mixture and crumbled bacon to your pasta pot. (You can keep the pot on low heat.) Stir until the cheese melts and it is ready to serve. Sometimes I add a little more milk if it is not creamy enough. And our family loves the paprika/dill/pepper, so I always add extra and just put those spice jars on the table so everyone can add more if they wish.

I think we can all learn so much from other mamas! The cottage cheese noodles are my son's current favorite! I hope you love them too!
