Menu Planning Monday. March 5

Happy Monday! Are you ready for a new week? I'm just looking over my calender. Almost every night this week, we have something planned. I'll be cooking some easy things and trying to prep a few meals in advance to make them easier to toss together at dinner time.


Last week, my favorite new meal was Sundried Tomato Pasta! On Thursday, my parents came up to visit and took us to Macaroni Grill, so I skipped the Orzo soup. I added it to this week's plan.


Here's what's cooking in my kitchen this week!
Monday- 
 Spinach Tomato Orzo Soup*. Little Polka Dot is making Ham and Cheese Roll-ups from her kid's cookbook.
Tuesday- Pesto Pasta with Chicken Sausage and Roasted Brussels Sprouts. Serve w/salad.
Wednesday- leftovers
Thursday- Sweet and Spicy Bacon Chicken. Serve with peas and mashed potatoes.

Friday-  leftovers

Saturday- Some of our best friends are coming over for take-out sushi and Just Dance 3:)
Sunday- Crock Pot Black Bean Soup. Serve with cornbread and salad.



*This soup is great! I half the recipe because it makes a lot! I added more black pepper, a dash of hot sauce, and grated parmesan cheese.

  1. Yum! I love your ideas! I am really trying to add more vegetarian meals so this week I'm trying an eggplant casserole.

  3. Best to make dinners simple when you have a busy week.

    Tonight I made a tomato sauce and it was delicious, I sort of made it up and it is very simple.

    I am going to make the Sundried Tomato Pasta next week from your menu.

  4. Because of the clog in my kitchen sink, I will be fixing Chick-Fil-A this evening. Will revisit a menu plan when running water resumes.
