Menu Plan Monday. May 7th
Happy Monday! Hope you all are doing well! We had a great weekend. We met my hubby's family at Hanging Rock Park for a picnic. It was a beautiful day. I love the mountains in the Spring when everything is lush and you have the promise of a lazy Summer just ahead of you.
Here's what's cooking in my kitchen this week. Yes, after a few weeks of no menu planning, I'm back at it. Life is so much easier with a plan. (Did I really just say that???)
Monday- Mexican Stuffed Peppers with Chips and Salsa
Tuesday- Cumin Spiced Chicken and Avocado Quesadillas with Mango Salsa
Wednesday- Crock Pot Pork Chops with Salad
Thursday- leftovers
Friday- take out
Saturday- Coconut Chicken with Apricot Sauce with Green Peas
Sunday- My hubby and dad are grilling out for Mother's Day! Can't Wait!

YUM, it all looks great! Good job at getting back into menu planning.
ReplyDeleteYou're making me hungry! I have made crock pot pork chops the last two times - once w/bbq and once w/sauerkraut. It's the only way I will cook pork now because other methods are always too tough. Your BBQ sounds wonderful!

ReplyDeleteJane S. I agree--crock pot pork chops are alwasy tender! I never have luck in a frying pan. I've never tried them with sauerkraut--sounds good.
