Menu Plan Monday. Feb. 25, 2013 on Tuesday:)



Hello! I hope you all are doing well! The last few days have been busy, so I am just posting our menu for the week.

If you have children, I'd like to share this menu planning tip. I posted our menu (for the next few weeks) on the pantry door yesterday. I've always kept it in my calendar until now. My children came home from school and noticed it. They had the best time talking about upcoming meals and what they like best! It was a neat moment. One of those moments that reminds me all the little things we do as moms really matter. Sometimes making dinner can seem like such a chore. Knowing it is appreciated makes it more joyful!

Monday-Tomato Basil Parmesan Slow Cooker Soup and salad.
Tuesday- Ham and Cheese Roll-ups, sweet potato fries and fresh fruit.
Wednesday- Channa Masala and naan bread.
Thursday- leftovers
Friday- takeout
Saturday- something easy
Sunday- dinner with friends

Also, especially for my sweet bloggy friend, Billie Jo, this is the soup recipe I mentioned last week. (I use one small pack of frozen brocolli instead of 3 cups. And I use regular dairy ingredients instead of reduced fat.)

Yesterday, I made a 1/2 batch of the easiest yummy cookies ever, Chocolate Oatmeal Cookies. As of 12:37pm today, they are gone. Not a crumb left. Which means I need to make another batch before my husband gets home because I promised him I would save one. :)

Please tell me I'm not the only one who eats all the cookies in the house!

  1. Hello, Elizabeth, and thank you so very much for the recipe! It is going into my soup section of my binder right now!

    And as for the cookies, I clicked on the link to show my Peyton that we love those too and we both noticed that we use the EXACT same ingredients...Peter Pan, Land o lakes Butter etc! Peyton said, "Mom, that is so neat!" To which I replied, "Great minds think alike!" : )

    1. Hi Billie Jo, I hope you enjoy the soup. My college friends and I have a Converse cookbook. We get together twice a year for weekend getaways and we try to add a few new recipes each time. This is my favorite in the book and I was happy to find it online for easy sharing!
      Great minds do think alike! Your daughter is so observant!

  2. Yum! Whenever my kids grumble about a meal, I ask them to think of ideas. I have a menu list of things in our repertoire, but also like to try new things. Since I plan my menu weekly, I also ask them the night before we go shopping to help me out! Of course, if it was up to them we'd have pizza, spaghetti and mac and cheese every day!

    1. I love that your kids help plan! My kids would love Mac and cheese every week, too! But the boxed kind-- they will not eat the homemade! I've got to work on that!

  4. Elizabeth, I knew I'd seen some other chocolate oatmeal cookies somewhere and it was here!! I really must give these a try they look so delicious!! That is the trouble with making sweet treats you just have to eat them!!

    What a lovely moment with your children and yes it does feel nice to be appreciated : )

    I dare you to do menu plan Monday on a Wednesday next week!! ha ha
