Menu Planning Monday. Jan. 30

  Well, the menu planning is going well. Last week's Sweet and Spicy Bacon Chicken was a huge hit! My son tried it and asked for seconds (this rarely happens, so I was thrilled)!

Here's what's cooking in my kitchen this week!

Monday- Lemon Cream Pasta with Chicken from Mel's Kitchen Cafe blog. Serve with salad and wheat rolls.
Tuesday- Sunday's leftover Vegetarian "Meat"loaf from Branny Boils Over
Wednesday- Beef Daube Provenal. Serve with salad and bread.
Thursday- Tex-Mex Fajitas . Serve with black beans and fresh fruit.
Friday-Take-Out from our favorite sushi spot!
Saturday- Baked Creamy Chicken Taquitos from Pennies on a Platter Serve with a salad.
Sunday -Super Bowl Party

I feel like I should add a disclaimer to my menu planning posts. Both of my children are picky eaters. Some of these meals I've planned will be teamed with peanut butter&jelly or Kraft Mac and Cheese:)

  1. Confession:I LOVE meal planning! I get such satisfaction out of scouting out healthful recipes that my family will enjoy, filling the kitchen with yummy smells, and setting a nice table. I think it's all just fun. :-)
    Your meals look delicious!! Thanks for giving me some ideas! I keep these running lists on Evernote (recipes attached) of things I want to try, my meal plan, etc.

  3. I've got to rush over and look at this vegetarian meatloaf! I've always wanted to find a recipe for that. Probably could have, but forgot about it until you wrote about it.

  14. Katy, My hubby and I enjoyed it! The kids would not try it. One day, they will realize what they are missing. I could not bring myself to use two cups of heavy cream! I made a roux, hoping to thicken it, it was good, but the cream would have made it heavenly. I'll go all out next time!
